Ever hear of Matching Theory?
Although the theorems are pretty straight-forward and lacking any elegant proofs, I have found some interesting applications. For example, The Kidney Exchange by Alvin Roth of Harvard, which you can view by clicking HERE.
He utilizes concepts such as directed graphs, cycles, paths, and I'm sure some other important ideas. Unfortunately I haven't made it through the entire paper yet, but I assure you I will. My final project is dependent upon this paper for a lecture that will emphasize the applications of Matching Theory.
